As much as I love experimenting in the kitchen, sometimes time and resources demand fast and simple instead and I’ve learned to keep around a stock of healthy but fast cooking ingredients for these times. This assures me that I could always make healthy choices, regardless of how stressful my day has been and how appealing a take-out meal may seem.
For tonight I quickly prepared a pasta dish with tomato sauce and as assortment of veggies. Because the pasta is gluten free and plant based it’s healthy and the vegetables really require no further introduction. The tomato sauce I found at the health food store literally only contained basil and sun dried tomatoes which was great as well. Everything worked together and tasted delicious!
Boil your pasta
Let the tomato sauce simmer on medium heat in a pan for a few minutes
Add the cooked pasta and whatever vegetables you have available and allow to cook for a few more minutes stirring occasionally
Season with a pinch of sea salt and fresh ground pepper
Finish cooking and add a sprinkle of of nutritional yeast on top for a cheesy flavor that goes so well with the tomatoes (optional)
Serve and enjoy!
